I&#8217;m\u00a0reluctant to get rid of them, however, because they have so many great recipes. Also, I love challenging myself to adapt recipes that contain meat. I know a lot of vegetarians are opposed to eating things that taste like meat, resemble meat, or remind them of meat, but I&#8217;m not one of those people. While I recognize that bacon is really bad for my body, I know that it&#8217;s\u00a0<strong>very<\/strong> hard to replicate the depth of flavour it adds to some dishes.<\/p>\n<p>This dish is one of those.<\/p>\n<p>I tried my best. I think it&#8217;s pretty dang yummy, truth be told. The original &#8212; <a href=\"http:\/\/www.amazon.com\/Spanish-Mediterranean-Cuisine-Traditional-Recipes\/dp\/8492391618\" target=\"_blank\">in an old Spanish cookbook<\/a> &#8212; called for only 1 rasher of bacon.<\/p>\n<div id=\"attachment_171548389\" style=\"width: 179px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/adriennemichetti.com\/apropos\/wp-content\/uploads\/sites\/3\/2014\/08\/IMAG2633.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-171548389\" class=\"wp-image-171548389 size-medium\" src=\"http:\/\/adriennemichetti.com\/apropos\/wp-content\/uploads\/sites\/3\/2014\/08\/IMAG2633-169x300.jpg\" alt=\"Spanish Stewed Lentils\" width=\"169\" height=\"300\" srcset=\"https:\/\/adriennemichetti.com\/apropos\/wp-content\/uploads\/sites\/3\/2014\/08\/IMAG2633-169x300.jpg 169w, https:\/\/adriennemichetti.com\/apropos\/wp-content\/uploads\/sites\/3\/2014\/08\/IMAG2633-579x1024.jpg 579w, https:\/\/adriennemichetti.com\/apropos\/wp-content\/uploads\/sites\/3\/2014\/08\/IMAG2633.jpg 1520w\" sizes=\"auto, (max-width: 169px) 100vw, 169px\" \/><\/a><p id=\"caption-attachment-171548389\" class=\"wp-caption-text\">mmm lentils!<\/p><\/div>\n<p>So I gave it my best shot. Here it is:<\/p>\n<p><strong>Ingredients:\u00a0<\/strong><\/p>\n<ul>\n<li>250g. green or brown lentils<\/li>\n<li>1 medium sized onion, chopped<\/li>\n<li>1 clove garlic, or more to taste, minced<\/li>\n<li>1 bay leaf<\/li>\n<li>1\/2 red pepper (capsicum), chopped<\/li>\n<li>1 plum tomato, chopped<\/li>\n<li>3 tablespoons extra virgin olive oil<\/li>\n<li>1\/2 teaspoon smoked paprika<\/li>\n<li>1 teaspoon Worcestershire sauce (<em>this isn&#8217;t vegetarian, though you could <a href=\"http:\/\/www.marthastewart.com\/258132\/homemade-vegan-worcestershire-sauce\" target=\"_blank\">make your own<\/a> or buy <a href=\"http:\/\/www.annies.com\/products\/condiments-sauces\/organic-vegan-worcestershire-sauce\" target=\"_blank\">one of the vegetarian versions<\/a> out there<\/em>)<\/li>\n<li>1 teaspoon Tabasco sauce or more to taste &#8212; I probably used upwards of 2 teaspoons<\/li>\n<li>2 teaspoons salt (or to taste)<\/li>\n<li>dash (or more, but you probably don&#8217;t want a lot) of <a href=\"http:\/\/www.seriouseats.com\/2013\/11\/pantry-essentials-liquid-smoke.html\">liquid smoke<\/a><\/li>\n<\/ul>\n<p>Soak lentils for a few hours, or use the <a href=\"http:\/\/www.bonappetit.com\/test-kitchen\/cooking-tips\/article\/the-faster-way-to-soak-beans-for-cooking\" target=\"_blank\">quick soak<\/a> method.<\/p>\n<p>Put half the onion, the garlic, the pepper, and tomato in a large casserole or saucepan with the soaked lentils. Add the bay leaf, paprika, and 2 tablespoons of the olive oil. Cover with water, cover with a lid, and simmer gently for 30-40 minutes until lentils are tender. Add a teaspoon of salt just before turning off the heat.<\/p>\n<p>Heat remaining olive oil (1 tablespoon) in a frying pan, and add the rest of the onion. Fry until gently browned, then add the liquid smoke and a\u00a01\/2 teaspoon of salt. Fry for two more minutes.<\/p>\n<p>Add the fried onions to the lentil mixture, and check for salt, adding the last 1\/2 teaspoon or more if necessary. Add Worcestershire sauce and Tabasco to taste (amounts above are guidelines only), and a splash more of olive oil. Cover and cook on medium-low heat, simmering, for another 5 minutes.
